Melanzane fritte

Here’s a great twist on finger foods: patatine fritte di melanzane. Delicious, healthy eggplant made even more delicious and a bit less healthy by breading and frying it into yummy fries.

I used chickpea flour (la mia farina preferita) mixed with a little cornstarch to ensure a crunchy layer protecting the eggplant. Ground flaxseed mixed with water works as a binder for the breading. Any bread crumbs will do. I used gluten-free bread crumbs but if you’re not worried about gluten, go for panko. Spices are added in both layers for lots of flavor.

Eggplant really soaks up oil so I try to use as little as necessary. You could deep-fry these but on the other extreme, you could also bake them. I like the middle road of pan-frying. I make a very fast marinara sauce by cooking up some crushed tomatoes with garlic powder, sale, basilico essiccato, origano secco, black pepper and a pinch of red chile flakes. It’s done in 15 minuti!

My Eggplant Fries are addictive! Creamy, decadent eggplant surrounded by an Italian-flavored crunchy coating. When dipped into marinara sauce, you swear you’re eating eggplant parmigiana. If you’re having company, double the recipe because these will not last long!!

Melanzane fritte

1 melanzana, pelato
½ tazza di farina di ceci
1 cucchiaino. amido di mais
1 cucchiaino. basilico essiccato
1 cucchiaino. origano secco
1 cucchiaino. paprika
Sale e pepe qb
2 Tbs. semi di lino macinati + 6 Tbs. acqua
1 ½ cups almond milk
1 ½ cups gluten-free bread crumbs
1/4 lievito alimentare cup (or vegan grated parmesean)
Olio di colza per friggere

Cut the eggplant into large fries. The easiest way to do this is to cut the ends off the eggplant, peel it, then stand it up. Slice the eggplant length-wise into 1/2″ pezzi. Then lay each piece down and cut it into 1/2″ strips. If you want your fries long, leave them like this. If you want them shorter, cut those strips in half.

Mix the flour, amido di mais, and spices in a shallow dish. Mix the flaxseed and water into a loose paste. Add it to the milk in a second shallow bowl. Aggiungere il pangrattato, lievito alimentare (or grated parm), salt and pepper to the third shallow bowl.

Calore su 2 inches of oil in a pan or skillet. Toss eggplant in the flour mixture, then dip in the milk/flax mixture, then into the bread crumbs.

Fry the eggplant until golden brown, circa 2-3 minuti per ogni lato. Transfer to a towel-paper lined plate. Serve with marinara sauce. Godere!

Gli “V” Parola: Ditelo. Mangia. Live it.

Sure you can, Queste. When I bake things that I want to be crunchy, I spray them with oil and put a wire cooling rack on top of the baking sheet. That way the bottom of the fries can get heat and breathe. I would think 350 oppure 375 and eggplant doesn’t take long to cook. Fammi sapere.

Do you think I could bake these instead of frying? (I know recipes are just never QUITE as tasty when baked instead of fried, but I prefer baking when it’s possible.)

That was really awesome! I did something like this back in October, only I used the eggplant fries in tacos and used a chile powder/cornmeal breading instead.

My husband didn’t like eggplant but now he loves it, even just plain bakes. But if you don’t like it, fried is a good way to introduce yourself to it.

I’ve never really enjoyed eggplant, but I think I’ll give these a try. They look and sound really good! Perhaps I just haven’t had it prepared in such a yummy way before 🙂
