Chili z tempeh

One day it feels like Spring, the next it feels more like Winter again. One day I’m posting salad recipes and today I’m back to warm, comforing foods like chili.

This is my vegan take on Chili con Carne but instead of meat, crumbled tempeh is browned to give it that same “silny” tekstura. The vegetables you add are up to you. I usually add whatever I have in the fridge and this time it was zucchini and green beans. Take the spice level up or down according to your taste. That’s one of the nice things about dishes like chili – you can really personalize them and make them your own.

Chili z tempeh


Składniki

8 oz. tempeh
2 Tbs. olej szafranowy
Sól i pieprz do smaku
1 Tbs. wegańskie, sos Worcestershire bezglutenowe
1 medium yellow onion, pokrojone w kostkę
4 ząbki czosnku, mielony
2 papryka, dowolny kolor, chopped
1 duże lub 2 średnie marchewki, chopped
1 cukinia, chopped
1 szklanka fasolki szparagowej, chopped
1-4 oz. może zielone chili
1 Tbs. chili w proszku
1 Tbs. zmielony kminek
1 Tbs. kolendry mielone
1 Tbs. papryka
1-28 oz. może pomidory pokrojone w kostkę
1-15 oz. can red kidney beans, usunięte i wypłukane
1 filiżanki bulionu warzyw o niskiej zawartości sodu lub wody
2 Tbs. świeża kolendra, chopped
2 szalotki, drobno posiekane
Wegańskie śmietana, cheddar shreds, for garnish (fakultatywny)

Wskazówki

Cut the tempeh into chunks and pulse in a food processor until it has a coarse meal texture.

Heat the oil in a large sauté pan over medium high heat. Add the tempeh, sól i pieprz, and Worcestershire sauce and cook until the tempeh has browned and crisped up a bit, o 10 protokół.


Add the onions and garlic to the tempeh and cook them until the onions have softened. Dodaj papryka, marchew, zucchini and green beans to the pan and cook for 5 więcej minut. Mix in the green chiles and then add the spices to the pan, stirring the mixture to incorporate the spices throughout.
